Here's a no-fuss, foolproof all-in-one cake, where the ingredients are quickly mixed together. The following quantities and baking instructions are for a deep 20 cm/8 inch round cake tin or a 20 cm/8 inch ring mould.
Storing and Freezing
The cake can be made up to two days in advance, wrapped in clear film or foil and stored in an airtight container. The cake can be frozen for up to three months.
Flavourings
The following amounts are for a 2-egg, single quantity cake, as above. Increase the amounts proportionally for larger cakes. CHOCOLATE Fold 1 tbsp cocoa powder blended with 1 tbsp boiling water into the cake mixture. CITRUS Fold 2 tsp of finely grated lemon, orange or lime zest into the cake mixture.
Ingredients
115 g /4 oz /1 cup self raising flour
1 tsp baking powder
115 g /4 oz /½ cup soft margarine
115 g /4 oz /½ cup caster sugar
2 size 3 eggs

1 Preheat the oven to 160oC/325oF. Grease the cake tin, line the base with greaseproof paper and grease the paper, or grease and flour the mould.
2 Sift the flour and baking powder into the bowl. Add the margarine, sugar and eggs.
3 Beat with a wooden spoon for 2-3 minutes. The mixture should be pale in color and slightly glossy.
4 Spoon the cake mixture into the prepared tin and then smooth the surface. Bake for 20-30 minutes. To test if cooked, press the cake lightly in the centre. If firm, the cake is done. If soft, cook for little longer. Alternatively, insert a skewer into the centre of the cake. If it is come out clean, the cake is ready. Turn out on to a wire rack, remove the lining paper and leave to cool completely.
